As long as he's not put it all into crypto, I think it's fine. Penny stocks are good for beginners. Also look into medical and technology stocks, they're some of the stocks that are more likely to explode in value. I know some insufferable asshole who decided to invest 10,000$ in a pharmaceutical stock, and he cashed out when they were valued at about 120,000$. Keep in mind, this guy isn't the brightest and he does manual labor for a living. I'm not saying to just dump a fuckload of money in a random stock, but just something to keep in mind.I fully support this new stock market adventure. Do you guys think it would be a good idea possibly to pay it off for her as a birthday present when its her birthday? her birthday is in December.

It's distinctly possible she is being polite with you if she didn't express disapproval or discomfort (although you should stop telling everyone about these matters regardless).
But dude, paying off student loans for work acquaintances is well outside the boundaries of socially normal behaviour. People don't do that, and if she's remotely normal she'll be more scared and horrified about what such an acrion indicates about your perception of your relationship with her than grateful about the debt being gone. Plus you could get in trouble at work and compromise your job for creeping out coworkers with socially abnornal behaviour. Don't do it.
If you actually like her and think there may be any mutual interest, ask her out. If she says yes, you can consider offering to pay off her loans further down the line if that goes anywhere. If she says no, you can be certain this is a bad idea to entertain. At any rate, don't get too ahead of yourself.
I would only do it if she expresses openness to my interest. I am trying to find an opportunity to talk more with her but i only get one small opportunity at work to talk to her. I have been trying to talk with her outside of work on facebook, but so far, only talked with her on facebook about an hour on tuesday. I agree with your concern, that makes sense.
Why are you already plotting to give this woman $2500? You know that most men wouldn't even spend that much on a wedding ring, right? Just giving money to women is not a way to court them.
