Because a lot of law is descended from Roman law.

It's where we get the term jurisprudence for example.
Well... okay, fair enough but why can't they just update it so basic people like me who didn't study either law or Latin can understand what the fuck people are talking about?

While Latin is a mostly dead language, it has survived as the jargon used by the Western legal profession, you are basically asking them to change millennia of learning and tradition.

Up until the late 19th century most educated people learned Latin as part of their education.

Millennia ago they didn't have semi-automatic assault rifles, but they were added to pretty much every modern legal system, why's it such a bother to translate a language pretty much only lawyers know into dumb people language?
As the saying goes, if it ain't broke, don't fix it.
I suppose as long as it gets the job done in the court system then it's fine, but it also makes legal proceedings harder for us common folk to follow; correct me if I'm wrong (and I guarantee I am), but wasn't the point of public trials supposed to be that the public are informed about what was happening?

The thing is the Latin serves as both abbreviations and to state specific legal concepts compleytely umbiguously.

For example legal representation of one's self -> pro se
habeas corpus -> hearing establishing the legal grounds for one's arrest.
So on and so on.
 
In Texas you have the right to work without being forced into an unaccountable organization that garnishes your wages as an condition of working and then gives your money to politicians who explicitly want to take your rights away.
Other than taxes I'm not sure what you'd consider wage garnishment for us Europeons, and our politicians are usually pretty pro-workers' rights.
 
Mandatory automatic union dues
Good point, I'd definitely hate having to pay optional union fees but I'd love to pay mandatory lawyer fees when I try to sue for wrongful dismissal, instead of the union paying for it. Putting money into a pool that pretty can arrange for external HR (which could've avoided this whole KickVic nonsense) or helps me petition for better pay and work safety seems like a better idea than America's "yeah, it's up to the employers and if the employees don't like it then sue me" method.

As far as I'm aware, there's nothing forcing you to join a union in the EU, you can just go it alone.

We're talking about America, in America labor unions hold monopoly on certain jobs and you must join them as a condition of working that field at which point they automatically get a portion of every paycheck you make unless you live in Texas where such practices are illegal and you're legally entitled to go it alone.

That and they tend to pander to socialists. Say if you lean right and you work in a union state, then your union dues go straight to an organization that most likely is supporting political candidates and agendas that you might be opposed to.

It's because the words mean very specific things. Like the term "assault rifle". Those words mean something and it's not semi-automatic.

Dumb people aren't going to understand things no matter how much you try to pander to them. They're dumb. It's their raison d'etre - to not understand anything.
