Not as part of a suit, no. What they can do is go to the court and seize her bank accounts. They could probably seize other property of hers as well.

Man, Texas is sounding more and more baller all the time.At this point, the only thing I can guess is that she believes she is Judgement Proof, meaning that even if she loses by default, they can't really take anything from her (and since it's Texas, they can't even garnish her wages). Which if that's the case, it's possible she intends to completely shoulder any part of her damages on the others in the suit, which I'm sure will go over well.

That's not how civil cases work and this has been explained numerous times over half a dozen threads.
I can think of one other possible scenario: that some wiin tore the papers off her door for the winnery of it. Not sure if posted here or elsewhere but at least one rando has taken pictures of her door before - it's not that much of a stretch to think someone else could have come and 404ed the papers.

It not so easy. Her bank accounts can still be seized. We know she's works; she gets paid to voice act. Once the judgment is made against her, she is on the hook for whatever damages she has accrued. If she gets married, her spouse is on the hook with her. Her bank accounts can and will be seized. Even something that would normally be exempt, like Social Security income, can be seized if its mixed in a bank account with other the rest of her money.
If she has any property above and beyond what is normally protected, its probably not safe. For instance, among the things protected from asset seizure is "Your homestead, up to 10 acres urban property (single or family) and up to 100 acres rural (single) and 200 acres (family)". However, if she, say, owns a second home, a vacation home, or her family home, those are probably not protected. Household items are only protected assets up to $30,000 for a single person and $60,000 for a family. Only one car is protected, per licensed driver in the house. She isn't married yet, so if she own more than one automobile, the second car onward is fair game. Other protected items include two firearms, tools of your trade, sporting equipment, bicycles, 2 horses, 12 head of cattle and other items.
And the judgment against her can be renewed every 10 years. So she could potentially have this judgement hanging over her for her entire life. Any money she makes can be collected upon by Vic the minute it hits her bank account, even after she marries. And now that the lawsuit has been filed, she can't move or transfer any assets legally.

How it works is, even if she was found guilty for 30% of the damages, and Mo/Ron 65% of the damages with Funi only on the hook for 5%, if MoRon and Jamie can't pay, Funi is then on the hook for everything else and can get slapped with the full cost. Then Funi would have to file a separate suit against Jamie and MoRon to get their portion of damages after the fact. And trying to do so would be a wasted effort as it'd have already been shown the other stooges have no money.
This is why everyone is saying it is in Funi's best interest to settle early. If they get a settlement which severs the connection between them and the other defendants they could get away with paying peanuts vs being slapped with a (potentially) multi-million dollar cost that they cannot recover from the other parties.
