It's not even a fact of people doing it, discord AUTOMATICALLY archives each and every message that is posted.(Even deleted posts are still in the archive. So there is no getting out of trouble by scrubbing the discord.) Normally that's just basically "auto-saving the game" of each discord server when new posts are made.

So basically think of each Discord an individual memory card/flashdrive, and save "destroying" the physical hardware, the data will never truly disappear.

Social media companies comply with proper legal requests. They have no reason to get involved in legal disputes which do not concern them, let alone to spend money on doing so.

Exactly. Why would they spend money trying to fight something when they can send a data copy over via subpoena? Doesn't cost them anything and they wash their hands of the dirty business brought before them.

Yes you can subpoena the records, get their IPs and other identifying information from them. It wouldn't be that big of a deal and they likely would not fight it, similar to Facebook and Twitter with these things. The size of the company is irrelevant because none of them are going to pay a lawyer to fight for your privacy, unless in rare cases it is from the government.

I would also imagine that they keep copies of the messages, but not recordings of the voice logs but I'm not certain of that. For sure they will have a record of everyone who joined or left the server at any time.

Yes, they do. They don't give anything without a court order or subpoena. They probably are prepared, as it's not as big of a deal as you may think. Discord will likely cooperate, they have no personal stake in it, nor any risks regardless of the outcome unless they do fight it.

Jamie's sarcastic husband at Sony and Costhots picture and statement of being the investigation was also done on the 22nd of Feb. Pretty weird how all of this stuff lines up in the same timeframe... couldn't have been coordinated or anything.

I'd really like to see the whole conversation because this seems like an odd turn of events. Emmett was either just about to publish his unflattering article about Vic or he had already done so. What was it that caused such a rift that resulted in him being belligerent, telling everyone that he was "out" and then getting banned by Jamie?

Was he already in their Discord or invited in as a result of writing that piece? If the former, did they encourage him to write it or help him put it together? If the latter, were they doing something he fundamentally disagreed with?

Any of Vic's attorneys could just write up a subpoena duces tecum, serve it on Discord, and they'll be legally obligated to respond to it by either sending the stuff that he wants or trying to explain to a judge why they shouldn't have to.
