It mainly refers to the hebrew letters, and in fact when old prayer books or hebrew bibles (called a chumash or tanakh) are torn or need to be discarded, they are put aside to be buried. Jewish religion puts a strong emphasis on words, specifically hebrew words. They believe god literally spoke the world into existence in hebrew, and take curses very seriously. Many hebrew prayers were written in kanbalistic formulas so complex and poetic that our friend, the Crusty Jesus Man Brad would be utterly lost if you tried to explain the signifigance to him.
