As requested to put up the recipe for the Bread Pudding.
Tales from the Po' mans file. Jojo's Ghetto-man Bread pudding.
This bread pudding recipe was given to me close to 40 years ago as I was getting an idea on what the hell to do next. It is very easy and cheap to make that easily rivals what you can get at a restaurant.
Ingredients:
One large mixing bowl.
Several bake pans/loaf pans of your choice. I use loaf pans.
20 to 24 oz of bread. It's about 1 16 oz size of dry sourdough and 8 slices of regular bread.
4 cups regular milk.
2 large eggs.
2 oz of raisin.s
20 maraschino cherries cut up into four pieces.
2 cans of undrained Fruit Cocktail. Keep the liquid in the can as you will use the whole thing.
1+ cup sugar.
1/2 to 1 tsp ground cinnamon.
1/8 to 1/4 tsp ground nutmeg.
1 tsp vanilla extract.
Cinnamon/Sugar Mix.
4 parts sugar to 1 part ground Cinnamon.
1 clean spice shaker.
Brown Sugar Sauce (optional).
1 pot.
3 oz of brown sugar.
5 oz of sugar.
4+ oz of regular milk.
Vodka is optional.
Directions:
Preheat your oven to 350 degrees.
In a large bowl you are going to mix milk, eggs, fruit, sugar, cinnamon, nutmeg, and vanilla with a whisk. You could also whip the eggs before hand. Myself I just put everything in a large bowl and whipped it up together in a not do aggressive fashion. Just enough to mix up all of the ingredients together.
Next pour over bread and mix so all bread pieces soak up the liquid. Let it sit for 15 minutes or so.
I use 2, 6 quart plastic wash basins to soak my bread crumbs in. I mix it the best that I can and then flipping it over on to the second wash basin and let the contents soak for another 15 minutes. If there is not enough watery mixture left and your bread crumbs are too dry add some more milk into the mix.

I use them because they are cheap and in certain cases when I have to mix things such as this it makes the job so much easier to do.
Next you are going to get several loaf pans. Smear the inside walls with butter that has salt in it, Most of your regular butter does have salt. Then you are going to powder the sides of the buttered loaf with flour. This will help with not making the bread pudding stick to the loaf pans.
Once the bread crumbs are nice and soggy You are going to pour the contents gently into the loaf pans, shaping them into loafs as best as you can, then place them in the oven for 30 minutes. I place my bread pudding loaves on the top rack.
While its cooking make up your cinnamon/sugar mix.Mix together 2 tablespoons sugar and 1 teaspoon cinnamon. Set it aside and if you are like me you already have a empty spare spice shaker for sprinkling home made mixtures. Otherwise you just have to be careful on how you sprinkle your cinnamon/sugar mix the old fashioned way. With your hands.
Next get an other pot and place your Brown Sugar Sauce contents into it and stir it under medium head. Stir until all of the sugar crystals have been dissolved. If you need to add more milk do so and set it aside.
OPTIONAL After it has cooled down very hot to medium hot you can add other ingredients to your sauce. Vanilla, Maple Syrup, Orange Extract, other spices, as well as Vodka. 1 to 2 oz of vodka and/or liquor of your choice. I generally add 1 to 2 oz of vodka. Sometimes I splash some of it on the warm bread pudding just out of the oven and let it sit for a few minutes . IF it is too hot all you are doing is burning up the alcohol and that negates the purpose of it being used.
You can add other choices of alcohol, such as spiced rum or a good whiskey. But this is a ghetto bread pudding so cheap ass vodka will do nicely to get that mild hmmmm from it. And of course this is optional as it tastes great without it.
After 30 minutes pull out your bread pudding loaves and sprinkle it with your cinnamon sugar mixture and bake an additional 30+ minutes. After 30 minutes take it out and stick a fork into several different areas and if it does not stick to the surface of the fork its done. If there is stuff on the fork it needs to be cooked 5 to 15 minutes more. Check every 5 minutes to see if the bread pudding is finished. Total
Cooking time is over 1 hour.
Cut up your pudding into slices, add the sauce if you made it and serve. Any left overs and there will me a lot you can freeze for later, including the sauce.
