I've explained this before on the TDS thread. I'll add an additional reason here.
1) As Glen Reynolds keeps joking, all the dems have to do to win is "not be crazy." Well of their options, Biden was the least crazy one.
2) I'm sure you're about to name some exceptions. True, but this leads into point 2: The dems are very worried Trump is set to win. If he does, the party (as a brand) is set to be damaged for a few elections. So what they need is a sacrificial lamb to toss into the election that can give them a plausible excuse for a loss.
If they put up one of the younger "not crazy" people, and lose, the brand is going to be in trouble since they can't exactly run that person again - nobody likes a loser! But by putting up Biden (who I'm still betting will die before election day) then they can spin that it wasn't the brand that cost them the election, but their candidate's failing health. Thus in 4 years they can run one of the younger not-crazies then who will have the odds on their side given the American cycle of elections.

Thing is, though, that a Biden who is more lucid still has a record he can be attacked on and Trump will be attacking him mercilessly regardless. Remember, Trump went through an entire group of white dudes(+Ben Carson, although I'm not sure if he counts for anything since I would swear he was asleep most of the time)during the 2015-2016 GOP primary in order to even get to the point where he could beat the Shill during the general election. Trump isn't Bernie, he isn't going to be polite, and he won't be lobbing soft balls.
