So the thing of it is, I'm pretty disgustingly honest. An old girlfriend of mine used to call me Butters and George Bailey because of my 'aw shucks' kinda personality.
And so while I would like to believe that, no matter how stupid or badly executed this gift card plan has been, she actually did what she said. (I know, cue the rainbows. But really, if she did it, great.)
However... as Valentine Cunningham suggested in British Writers of the Thirties, there's a reason solid, honest people love murder mysteries and true crime stories, namely that they would love to think of themselves as dangerous, underworld types. And, I would argue, they would be pretty damned good at it. For example, if I were really dishonest, I wouldn't muck about asking for pigeon feed to feed the kiddies. I'd put on my best suit and ask an equally well dressed commuter for thirty bucks train fare and promise to repay him next time he's on Platform 6. This is where the term 'confidence man' comes from: a well dressed rapscallion approached genuinely posh people, affected an acquaintance and capitalised upon social embarrasment when the other didn't recognise him, saying 'Would you have the confidence to lend me your watch?' And off he went.
Now if it were me, I'd buy six Walmart vouchers of $50.25 and make a big show of giving them away, showing the receipt on YouTube. Of course, I'd have also doubled back to the Customer Service counter before grabbing a Diet SuperSONIC Bacon Double Cheeseburger Lite on the way home, and bought six more vouchers of $10 each to give away, leaving me with a nice receipt for $300-odd to show the subs and $240 in my pocket for later. Take a little, leave a little, as grifters used to say. It's not like anyone's going to contact pixelated recipients of her largesse (and I do mean largesse....).

I'm going to say she did actually give away six giff cards worth $50.25. Not because she isn't an abusive mong ruled by rapacity who wouldn't pull a con, but because Amy believes this is the redemption arc she's been waiting to fall in her fupa.

I believe she really did as she said because 1. it's incredibly low effort and required no actual donation from her, 2. she has nothing to do all day and we're supposed to be staying inside, what with the poison air; this is an excuse to go for a drive, 3. she's had a lot of drama lately and, like @StrawberryDouche said, she wants a redemption arc, 4. this gives her something to be holier-than-thou about for the next year.
