I've just recently started getting into this but simple egg noodles or dumplings are pretty easy and it doesn't matter if they're irregular. If you want them to be a regular size like any kind of Italian pasta though you need something. There are rolling pin type things with cutting blades on them that are really cheap though, although they do only one size.
