Basically they booked him, he had a hearing for bond/bail and was released on his own recognizance. That means he will have conditions placed on him to remain out of jail while he awaits his first actual court date which will be a pre-trial and he'll probably be given the chance to plead out to a lesser charge or two. As for your question, yes, the charges stuck which is why he has the future court dates.
Anyone with common sense wouldn't be out till all hours macing people and filming him self committing crimes.

It allows somebody to inflict some amount of temporary damage to their enemies with a minimal amount of effort. They probably don't realize that using mace on people without reason in eyes of society and the courts will land you in a world a legal trouble.
Even if the bouncer's use of force was unreasonable, which as you point out, it almost certainly wasn't, Baked most likely didn't have any right to respond with force in self defense. I think a savvy prosecutor would note that about ten seconds elapsed between Baked being pushed and him retrieving the mace. The entire time, the bouncer is standing at entrance of the restaurant, not making any motion that would indicate that he is going to pursue or use additional force on Baked.
