In terms of Behind the Scenes/concept stuff, Generation Tech is usually the most recommended channel I see and he also does a lot of lore videos and generally informative stuff and news, only problem is he sometimes mixes lore and info from both Disney and pre-Disney (although that's a problem for a lot of SW channels with the exception of The Lore Master who actually bothers to keep them in separate videos, so if you want give him a shot too). Generation Tech is also not one to blindly shill as he has criticized elements from TFA, TLJ, Filoni Wars, Aladdin's Rebels, the prequels and the new Squadrons; not full blown bashing, but it shows that unlike others that he's willing to acknowledge their shortcomings and failures. Despite this, I don't really subscribe to him because of the obvious lore mixing and the fact that most of his videos cover what's trending at a certain time.
The Lore Master is just a lore channel, so news and reviews are rare from him. He's pretty straightforward, although sometimes it feels like he's just reading wookieepedo articles (which are dubious most of the time) when its not related to comics or games, but regardless he's one of the few who doesn't mix canons or make up his own headcanon to compromise things. He does occasionally get a bit shilly though. I don't subscribe to him much either because of what just feels like Wookieepedo copypastes, unless its from comics or games. He also does what-if videos iirc.
The only lore channel I subscribe to is Manda-Lore who probably does the most informative and well-researched SW lore videos that are not just taken from wookieepedo which are more than just random pictures while someone talks in the background since he also adds neat little visual and sound effects at times. He also doesn't mix lore and mainly focuses on pre-Disney stuff. Despite his name, he does lore videos about any SW subject, not just Mandalorians. His only problem is that he hardly ever uploads, only making 3 or 5 videos a month at best.
The Scoundrel's Cantina is also a popular choice. He's very friendly, covers a wide range of subjects and he's more open to criticizing Disney than the others, but he tends to mix lore from both a lot and he does some lego videos which really turn me off.
Ryan Kinel used to do lore and news videos, but now he just focuses on news which is pretty disappointing, but regardless I prefer his news coverage to others since he doesn't beat around the bush most of the time, points out that certain rumors like the Lucasfilm feud or Filoni "fighting for SW" or Kennedy sabotaging Favreau are probably bullshit while other news channels believe it and he's the only one I know to criticize Filoni and Filoni Wars.
Even a fucking Jawa simulator would be a more engaging experience at this point... Despite their exclusivity with EA, Disney-Lucasfilm did make a few of their own games via ILMxLAB, although all of them were just mediocre VR games, some of which aren't even that well known, like some shit called Jakku Spy and a Porg simulator for whatever hellish reason. So yeah, they had their own VR shit with plenty of potential for at least some short simulator games, and they just focused on the most crap and dull ideas possible. Only noteworthy title they made was a Vader VR game but that ended up going nowhere storywise, yet was still nominated for an Emmy for some reason. Despite the name, you don't even get to play as Vader in that shit. Just as some Disney OC who is a descendant of "the famous Lady Corvax" who is a literal who that was invented for the game.
