In the case for Lucas wanting a virgin, it's really just something that highlights the qualities he seeks. As we've seen by the blatant underage mostly naked girls he's posted on his Instagram multiple times, Lucas isn't just sexually attracted to young women for innate biological and evolutionary reasons the way some older men are. He's sexually attracted to specific qualities that exude vulnerability, lack of experience, dependency.

I don't think the same can be said for all atheist men who seek a virgin, as I'd like to give them the benefit of the doubt in not being as preditorial in nature as Lucas, but in any case it seems to be a desire that stems from a place of insecurity.
