Jazz's weight is the one thing stopping him from being even more of a guinea pig for Jeanette's pet surgeons, so blimping up is probably a subconscious defense mechanism at this point, in addition to being his one outlet for rebellion. Ironically, Jeanette bringing him a tub of ice cream might actually help him stop, since her endorsement means he doesn't get the thrill of defying authority from it anymore.

Her typical rewriting of his life's history to suit her Munchausen purposes.
I can't imagine an anorexic Jazz. He's gone through enough pain without adding hunger to the mix.
