the animations were made in Sun and Moon's time, bro, that's where Furret Walk came from, too.
Animations for the majority of pokemon that weren't obviously shilled for (Cinderace, Ash-Greninja) are complete garbage past gen 5 (along with the muted and weird colorschemes a lot of mons got going from gens 1-5 to gens 6-8 ) and the only reason why Furret's walk is so liked is because Furret is a goofy little fella whose little walk loop lends itself well to the design of the mon. Scolipede does likely have a gallop to it, but theres no reason to believe it can't roll considering it's pre-evolution is literally a wheel

Aren't Ultra Beasts just pokemon with imbalanced stats?
Their base stats are all prime numbers, and generally pretty min-maxed. Goes along with the 'not of this world or reality' theme I suppose, plus what can be considered adaptations to their homeworld's climate. A nihilego doesn't need Defense if everything on it's world uses laserbeams and crystals and poison to attack, a Buzzswole doesn't need Special Defense if the landscape is full of huge fucking punch bugs and mountains that also punch and flex, Xurkitree doesn't need much speed or attack but it does need Special Attack since it can plant itself in a larger Xurkitree's root system and conduct assloads of electricity, etc

And Guzzlord must be in nonstop pain given the world he lives on.

Living is torment for poor guzzlord.

At this point you might as well just give him an evolution or something since it would take an entire revamp to make Ledian useful, plus it would give him access to evolite which would be interesting, has there ever been an item that caused more mayhem than that?

Since Eviolite I think Linoone and Corsola were the only fully evolved pokemon to become NFE, so Eviolite has caused almost as much mayhem as Hidden Power. You know, that move that GF yeeted the fuck out of in SwSh because it gave every special attacker non-fairy type coverage.

We 100% are never seeing any other defensive mons like Quaggy get an evolution after GameFreak saw what Eviolite did to Chansey. They tried again in a much lesser extent with Galarian Corsola, and I'm sure they regret it.

In Gen VIII Blissey is for the first time since Gen IV(aka before Eviolite was created) is often the better option over Chansey. From what I can gather it is mostly because, due to the lack of unmovable hold items like Mega Stones and Z-Crystals in Sword and Shield, and the prevalence of many new items who make-or-break many Pokemon's ability to function at all, like Heavy Duty Boots, made Knock Off show up everywhere, to the point that more often than not Chansey would lose its defensive edge over Blissey, meaning it's just better to use Blissey in most teams.

I imagine they'd just do what they did to Beedrill and give it a badass Mega that makes it actually usable.
