I find it hard to believe because the "artists" responsible to this dreck probably make a full pay job as "web designers" and take days to fart out their shitty work while using most of their time for office politics. This may or may not become a recurring theme, but I'll play devil's advocate again (sort of). Saying this is the equivalent of asking why are IKEA assembly instructions line art when the Renaissance masters could paint realistic, highly detailed furniture 500 years ago.
As pointed out above, it all boils down to cost and practicality. 'Humans of flat' can be downloaded in cheap vector packs and then easily re-dressed, recoloured and rearranged to fit almost any industry context, brand guidelines and diversity requirement. Why hire a full-time illustrator when a social media intern can replace say, that dude's jersey from above with a blue shirt, slap an apron and a hat, and turn him into a Black McD's employee in less than ten minutes?
You could almost certainly pay less and take less time for each commission by just contracting freelancers.
