Israel took a disproportionate amount of the fertile land compared to the number of Jews. Plus you can't just take about 50% of someone's property then be surprised when they fight back. Imagine if I took half of your food then when you got mad I said "Hey, I'm only taking a portion."
A portion which they were entitled to take, because it was granted to them by the Protectorate who did own the land at the time since they took it from the Ottomans.
The Ottomans had their own hand in reshaping the demographic of Palestine just as much as every ruler did before them (most notably Saladin himself). There are some countries that are true ethnostates and that haven't changed hands for hundereds of years like Japan, Palestine was never one of them.
Israel was granted land by a ruler who had already taken the land, and chose to honor a historical claim. Had Palestine been more restrained they could have bargained with the Protectorate or even made Israel look the villain when ambitions of expansion ever did start to rise by letting them start hostilities but that didn't happen
