Modern day though I'd assume it's because a certain swath of Americans, who bleach their chicken and dowse all their food with a mountain of spices, have basically ruined their palettes so any subtle flavor to them is completely undetectable.This video does a good job explaining the whole "yt peopo' don season dey food!" shit.
Short version: Spices got cheap in Europe so rich White people focused on high quality ingredients. Shitskins are poor so they have to cover up their low quality ingredients with cheap spices. I would like an explanation of why all shitskin food looks like diarrhea, though.
