Cool, a topic I can chime in about.
Castings of this nature are posted EVERYWHERE. Generally, casting associates will post anywhere they can, Craigslist, Facebook, Instagram, etc. Generally asking, for what they want. "Are you overweight and feeling like life is over? TLC is casting for a BRAND NEW reality show and we want you to share your story!". Imagine something of that nature posted everywhere. They will then pool their submissions and find which candidates that they feel will let the best ratings.
It is incredibly easy to verify who these people are and who they work for. If maj are working for major Network, such as TLC, credits and "verification" is a very simple IMDb search away. This goes for even relatively small casting offices / directors. Get fears of getting hoodwinked are really dumb, but from the Optavia saga, we know Amber doesn't do research.
It is not difficult to get on these types of shows. Amber could look up an email for the casting office, look, I already found it!

Amber poses the question if she'd go to a hospital or some kind of program for help and she would in a heartbeat...but only if those things were free because she has not money, nor insurance. Yet, someone contacts her work a meal ticket and she doesn't take then up on it.
While it only inflates her already massive ego, I don't doubt she's had multiple people in casting reach out to her. She already has a viewer base and people would tune in in droves. They know this and yet Amber, despite saying she gladly take what they're offering, doesn't. Really makes you think.
