Hasidic Jews (the ones you refer to as “the full blown suit and hat rabbi getup”) follow the Old Testament as closely as possible. The Old Testament forbids Jews from touching any unclean animal. (Dogs, cats, pigs, snakes, etc.). A clean animal is a mammal with split hooves that chews its cud. (Deer, cow, buffalo, sheep, goat) When you think about a society that lived 4000 years ago with no medical intervention, avoiding animals that can have diseases that can be passed to humans (ringworm, parvo, etc) it makes sense. But then Jesus came and the law was fulfilled but those Hasidic Jews don’t recognize that.
