John Maus - Copkiller. Don't care if its already been posted, it's that better. One of the most transformative covers I've heard. It spins a rap metal song into a godlike and somber ballad, a lullaby almost and likely also had influence on Jack Stauber.

I remember the hate petty Oasis fanboys gave this band, they were just mad because MFPs version is superior in every way
 
Todd Rundgren's cover of "La La Means I Love You" by the Delfonics. The song belongs to a great medley of soul covers and is aided by a fantastic transition from the preceding track (included in my snippet). Mixing psychedelic music with soul is a really good combination. I'm not knowledgeable enough on soul music to know if it's been done before, but I hope there's more music like this out there.

Cibo Matto's cover of "Aguas De Marco (Waters of March)" by Tom Jobim. I'm admittedly very biased towards this band, but I still think that there's merit in this cover. The percussion is much less pronounced than the original song, which I think makes it easier to fall into the relaxing, laid-back atmosphere of the song. Miho Hatori's vocals are quite interesting. Her English vocals are usually very heavily accented and oftentimes abrasive, yet her Portuguese is surprisingly quite fluent and pleasant.

The funny thing is aespa covered Dreams Come True which was originally by Bada's group (S.E.S). Still an excellent performer.
 
Reel Big Fish - Take On Me
Awesome cover from an awesome movie. This would be one of my choices where the cover is better.

Another one I didn't see yet I always liked was Alien Ant Farm's Smooth Criminal. I remember being so disappointed getting this cd and listening to it on the bus to school just to realize it's the only good song. They should have just been a cover band.

For any metalheads looking for covers, a good channel is Leo Moracchioli/Frog Leap Studios. He's been making almost weekly covers on his channel for years and even plays most if not all the instruments except when he has guests. I haven't checked it out in awhile but every now and then I'll go through to see what's new and go back down the rabbit hole. I'll just post one of my favorites because he makes WAP listenable. You can think of just about any song and go through his channel and there's probably a cover.
 
Maximum the Hormone's cover of the Blue Hearts' Minagoroshi no Melody might be in my Top 100 of all songs made by humanity. Something about the raw, relentless energy from the band at their popularity peak is something I can't find in most loud music I've heard.
