My favorite tends to be a pure combat warrior/knight, as I always liked playing a mundane soldier type character, like the Imperial Legion in Elder Scrolls

As a runner up, I also really like playing necromancers, as summoning an undead horde to do your dirty work and then raising up your victims to join your army never gets old. My favorite part of Morrowind and Oblivion was all the different kinds of daedra you could summon (which is why I was really disappointed with Skyrim's barebones summoning roster)
