I found a recipe for chinese style liver, its very tasty, goes really well over white rice. I could eat it everyday.


You don't need to use chicken livers, you can use whatever type you prefer, I usually use lamb. Just cut them into even chunks/slices. I am trying to find more interesting recipes for liver since I want to eat it regularly because I don't eat a lot of red meat. A couple I want to try are Thai and Moroccan style liver skewers.
 
I've had numerous people complain to me about how nasty this stuff is. Apparently I'm the only one who enjoys it. This was the one beer I could leave in the fridge overnight and my roommates wouldn't even touch it.

Isn't that essentially a Salisbury Steak without the gravy?
I guess, I can't recall ever having Salisbury Steak but I've heard the comparison. It's, done properly, a mix of ground beef, pork, and onion, throw in an egg and panko breadcrumbs, the recipe I have calls for some milk, but I don't know that it's strictly necessary. Pan fry on either side, then finish by steaming with red wine. Instead of gravy, you make a reduction of whatever's left in the pan, water, red wine, ketchup, and katsu sauce, although I've started using a local BBQ sauce, Montgomery Inn brand, instead of ketchup.

I've made them into patties and used them for burgers before, they hold up pretty well but I don't know how they'd do if you tried to grill them. Brie, Swiss, or white American for cheese.
 
Melted Brie on a or inside a hamburger is fantastic and if anyone hasn't tried it, they need to fix that. I do it with Japanese-style hambagu steak, which is like a meatloaf, and it's fantastic.
I like using the bits with the rinds for melting. Brie by itself isn't too bad, it's maybe just a bit too harmless, but in sandwiches or burgers it's where it shines the most. Its also good for melting it on top of schnitzel/fried chicken/milanesa, maybe with a fried egg to finish it off. Not only is it soft and sweet, but that slightly stinky aftertaste is so good, don't know why.
