I like my steaks bleu, and that's what I cook at home, but state law won't serve that to me at restaurants, so I settle for rare.

I was gonna say medium rare, but since I just looked up Bleu (which as it turns out is how I've actually been cooking my steaks for years) I guess that.

It's beneath the dignity of rednecks on welfare to eat that garbage. For anyone who's ever had money, it's a crime against humanity. Even 19th Century Jews from shitholes like Romania would saltcure the nastiness out their beef rather than cook it or boil it to death like Suburban Americans living in the Eisenhower Administration.

Always go with Medium-Rare. If I accidentally do rare or medium that's fine also, but I prefer medium-rare.
And to add: I always go with a ribeye. Every other cut pales in comparison to the almighty ribeye. Has to be higher a higher grade than Select too. Choice will certainly do.
Other than a ribeye, my second choice would be the Denver cut or porterhouse. I have also been known to buy short rib meat boneless and cook them as steaks. Those work fairly nice too.
