Medium's my tempo, since it's too damn chewy when it's rarer and dry as the pit when well. I also love it with salt, pepper, and an herb or two thrown in.
 
Rare to medium rare. Although, when the steak is blue it's pretty good too. Minimal spices, maybe a pinch of pepper and a bit of salt. I am partial to chicken fried steak.
 
Medium rare is my jam but I don't mind if it's cooked less, it just needs to be a good combination of seared and juicy.

I usually go for sirloins because ribeyes are a bit pricier, so that's more for special occasions. I usually have it with peppercorn sauce, sometimes bearnaise.

I assume I've been served this from time to time, as it seems to be pretty popular in restaurants, but I've never actually done it.

It seems too good to be true, i.e. perfect internal temperature with a nice flash fry finish on the surface.

Yes, I have a sous vide which I highly recommend. Very fun to use and experiment with.
I'm not much of a steak person though so I can't speak to how good it is compared to other methods.
But yeah, it gets it to the perfect temperature.
 
Oh! Here's something you should try if ever you go to Suisse, Savoie or somewhere else that might do this (you can probably do it at home if you have a fondue set and enough oil):

Roughly translated, fondue bourguignonne is a type of fondue where you fry chunks of beef in oil. You can cook them for as little or as long as you want, so it's kind of like very personalised steak.

This usually comes with a set of dips and a side, probably fries or something else. Great meal for two or more people.
 
Medium rare, medium. But I'm not picky steak is steak and it's a good thing.
