Literally any will do. Big serious ones will let you dry in bulk and maybe even add smoke, but a $30 plastic kmart job that just uses a fan and heat from the fan motor is more than sufficient.Do you have any recommendations for dehydrators? I've never used one before.
You can even knock up your own for a couple dollars using a light bulb in the bottom of a cardboard box that works by pulling a convective air flow, which I've used a couple times and it works fine, but something made of plastic that you can wash is a lot easier.
Right, use canadian or short cut bacon that has minimal fat to start with. You can leave a little on if you like the taste and are eating it immediately but less is better.You trim the fat off the bacon, even? I'd imagine you wouldn't have much left… Could you do ham or Canadian bacon?
Making your own bacon is also an option, you can control how much fat is there in the first place and the taste difference from store bought stuff is incredible, though drying it seems like a waste.
In fact if you're trying keto I highly recommend getting this book and working through it. Curing your own meat is completely worth it and motivational. You'll be eating better shit than you were before the diet.
