Most 3D Zelda dungeons were "tool-of-the-day" oriented puzzles, when it wasn't that it was some "lever" that
altered the dungeon some way and ended being a chore with the backtracking, the latter one worked better on the 2D games but translated quite bad on the 3D ones, they peaked 3D puzzles on Skyward Sword with the Time Stones but after that they clearly ran out of ideas.
Combat in 3D Zelda always happened on arenas and enemies were easily disposable with the help of a tool or a few timed sword swings.
At this point I believe all the "glory days" of the series people constantly preach about is looked with rose-tinted glasses and this just happens because the games were designed with accessibility in mind and children's brains filled the gaps with the presentation being about some epic tale. If Ocarina of Time was designed the same way people wish modern Zelda to be, it would be forgotten on some corner like the King's Field series.
I am not defending the Garry's Mod/Nuts and Bolts direction but the Souls-like approach is just a big alienation.
