That's how I do my lasagne and the pasta always ends up perfect. My advice is to use a dish that's a bit bigger than the lasagne sheets so the pasta has room around the outside and make sure you spread the meat and sauce to the edges, that way when the pasta expands it will stay in the sauce instead of sticking out and burning/staying dry.

My mother cut some fresh veggies up from the last remnants of her vegetable garden, and slow cooked them up with some three cheese tortellini from the freezer aisle. It was a bit too light on sauce, but the veggies were really great. I took the leftovers and ate well for a couple days.

My wife makes a similar thing with cheese tortellini, italian sausage, and sundries mushrooms and veggies.

Every time, it reminds me of the Louis CK line, "the meal is not over when I'm full; only when I hate myself."
