Apparently, during an early story draft for Warcraft 3: Reign of Chaos, Jaina Proudmoore was slated to die in the human campaign, fueling Arthas' desire to chase Mal'Ganis to Northrend.

During God of War 2018, when Atreus reveals the giant turtle's name to be "Charuli", Kratos groaned in disgust, reflecting the reactions when Atreus was originally thought to be called "Charlie" before his official name reveal. In the same game, there's a part where Kratos will say "Indeed", referencing the character of Teal'c from Stargate-SG1 (Kratos' actor Christopher Judge played Teal'c).

When Lucasfilm Games, later to be LucasArts, initially started making games, they were forbidden from making Star Wars titles for several years since Atari held the rights to the license to make Star Wars games. Ron Gilbert has said that if they had been allowed, they may have never taken a chance on adventure games.

During development of the very first Command and Conquer Joseph D. Kucan, a.k.a. the guy that played Kane was literally just some guy helping setup the green screens. They need to do some test photoage and he was chosen to just make up random dialogue and shit for testing. But they liked his persona and acting so much they made him into Kane.

During development of Company of Heroes the game was prototype in the Impossible Creatures engine, and was supposed to be called Brothers in Arms (till gearbox named their own series it).

Joe was a little bit more than just some Rando. He worked in various capacities at Westwood (he voices Brandon in the talkie version of Legend of Kyrandia, for example).
 
Warcraft 2 was originally going to have orcs coming into our world and you'd have shit like firefights and jet planes fighting against dragons, according to one of its developers.

After the first Warcraft and when we were talking about Warcraft II, there was an idea for about a week where we'd open another portal open and have the Orcs invade the modern-day world. We had this whole cut-scene we were talking about where it was going to be dragons and F-16s and firefights and stuff. And we were like, "Man, that's going to be weird. That's going to suck. I've never played Sam & Max, so I was surprised to learn that Bill Farmer voiced a popular character other than Goofy. Then I watched the opening of the first game and immediately recognized his voice. He's got a distinct way of saying "Max."
