Morrowind is the übermensch when it comes to vanilla experiences though, and I've never used content mods with it so I think I'm gonna go through it with Tamriel Rebuilt and Project Tamriel since Skyrim is years off.
You could also check out Of Ash And Blight, which is sort of like the invert of TR/PT. Where those projects are focused on filling out the rest of Morrowind and recreating the whole of Tamriel respectively, OAAB's schtick is adding more content to the existing areas of Vvardenfell.
I don't know how much it covers though. Check out this vid from everybody's favorite politi/philososperg to see if it's to your taste:

Edit: Looking into it myself, there appear to be a ton of mods under the OAAB label, but the "official" ones seem to be made by one MelchoirDahrk. The ones featured in the Warlockracy vid are these:

I did a spearman with shield character with this and it was great.
Too bad that mod doesn't seem to be compatible with OpenMW. It always bothered me that you couldn't use a spear & shield combo, especially in a game where the most dominant faction throughout most of the series is heavily inspired by ancient Rome. Don't even get me started on the fact that they just straight-up removed spears completely after Morrowind.

I apologize for being a pedantic dick, but Ancient Rome was far better known for short stabbing swords they utilized through their shield formations. They had weighted spears called pilum that they would throw prior to engaging an enemy line. They would stick into enemy shields and break up their defensive posture.

Spear and shield was the domain of the Ancient Greek phalanx. They came in a variety of lengths, including the absurdly long sarissa utilized by Macedon under Philip and Alexander.

Sorry, this is just my brand of autism I guess.
 
The Thieves Guild boss in Narsis just used the phrase "sussed us out."
No spoilers but there's a ghost riot in this mod. Imagine your boomer parents able to haunt you when you misspend your inheritance. Imagine they gather a posse of all your neighbors' boomer parents' ghosts and start throwing shit at you in the streets, and you have to call the ghostbusters to deal with this shit.
Tamriel Rebuilt is the shit. I have to return to Vvardenfell to make my stronghold to progress in the Great House and I'm not happy about it.

OAAB is just an asset repository for modders to use, it doesn't actually add anything to the game, the Grazelands and Tel Mora mods are the ones adding stuff using assets provided in OAAB

I've been waiting to not play Skyrim until Odyssey of the Dragonborn releases which I last checked in on since like 2020 so I was sure it had probably been released, maybe several years ago... but no, still in development without any concrete release date or even much outward visible progress. I understand the demand on an independent team but it's still extremely disappointing.
Yeah same, I’ve played through the existing LotD many times at this point, so when I go back again I’d like if there was some fresh new content to enjoy. I’m in their discord so if they suddenly announce that it’s come out, I’ll know immediately. I think it’s less likely to be vaporware than the majority of Beyond Skyrim, but we’ll see I guess.

Oblivion remaster made me realise that Skyrim is superior to Oblivion in every way.
Oblivion looks like shit, plays like shit, sounds like shit, is just shit.
The quests have much better writing in Oblivion. The thieves guild quest in Oblivion is almost entirely focused on stealing shit while in Skyrim you spend most of the quest line killing people and doing a daedric quest for Nocturnal. The fighters guild quest is an actual quest unlike the companions where they make you furry against your will and then you kill your spirit animal after burning a hagraven head in a Nordic tomb. Do I even need to compare the Mage's Guild to the fucking College of Winterhold? Skyrim was the first sign of Bethesda's decline.

I will admit, I never did the fighters guild, because I always bee-lined for Riften and the Theives Guild just to get in on the Dark Brotherhood. Sneaking is OP in Skyrim and ... well I don't think I ever played anything but Khajiit because of this. I noticed Spiff didn't realize how OP it was until his recent 100 day playthrough. I was kinda baffled. I guess even long time players didn't realize this. It's so OP.

I think I just got mixed up with Dark Brotherhood quests and Thieves Guild quests in Skyrim. I haven't played it for over a decade.
Now that I recall though... yeah the thieves guild does fucking suck in Skyrim. I forgot it was that shit.
 
it seems some people haven't resto-looped a enhance sneaking boots with 40000%.
Paired with silent casting and you can be an absolute menace, I'd go around paralyzing people, laying down runes and reverse pick-pocketing extreme poisons with similar effects. Good fun.
