I have to admit, Final Fantasy XV is my favorite one.
I liked VI because there was no real protagonist in the game... some people say it's either Locke or Terra but you can beat the game without getting either in your party after the world ends. Cloud, Squall, Tidus, and Vaan were all kinda insufferable compared to the more likeable side characters (Cid/Barrett, Auron, Balthier, etc)At the risk of sounding like a really stodgy nostalgia fag, I liked the older games, or at least the ones that told more fantasy oriented stories that focused on the plot as opposed to the delivery of said plot.
For instance, let's compare Final Fantasy VI to Final Fantasy XIII: Both had epic plots with world affecting consequences, but the former focused more on laying out the narrative while the later focused more on trying to deliver the narrative with style while sacrificing it's coherence.
I was HOOKED on FFVI because the plot was easy to follow while still filled with all sorts of interesting complexity. FFXIII bamboozled me with tons of complexity that was hard to follow right out the gate and thus it was hard for me to follow.
By the end of the first few major plot arcs of FFVI, I wasn't lost and eager to see where they went with it. With FFXIII, I finished the first major plot arcs, was still confused as to most of the details, and was really hard pressed to continue following a plot I still didn't grasp very well.
Haven't played FFXV, so I won't pass judgement on it, but I will say I really hated the games where they focused more on presentation of the plot as opposed to making it easy to follow said plot.
From what I heard Vaan wasn't supposed to be the original protagonist of 12, Basch was. But you can't have a Final Fantasy without a young twink as the main character. They kinda made you appreciate the other cast more. Auron was also a really good "guardian" figure for Tidus. I liked Cloud towards the beginning of FFVII though, he wasn't a whiny emo like he always is in literally all media associated with it. His personality was a fake one constructed both of his own and Zack's, so he had all these cool one-liners and he was so above-it-all in a really arrogant but likable way.
