I'll have to try that. I made mayo a long time ago with a regular blender and with a two-beater style hand mixer. The end results were good, but I couldn't get it to emulsify without adding mustard.If you have a stick/immersion blender
Use a little mustard, then. One egg, a spoonful of mustard, a bit of vinegar, a bit of salt, and then start to blend it, adding more liquid oil/grease in portions until it reaches the right consistency. I fucking hate store bought mayo but homemade is delicious. I use my immersion blender multiple times a week for all sorts of things.If you have a stick/immersion blender, there is no reason to ever purchase mayonnaise in the jar ever again. It is very easy and fast to make your own mayo that's better than anything you can get off the shelf in a supermarket.
If you must get mayo off the shelf, though, Duke's is the way to go.

I do something similar with mayonnaise + a thick hot sauce like El Yucateco or Gator. Really goes well with fries, kind of like a fry sauce but without the sweetness of ketchup.I've recently discovered that mayo and ranch mixed together makes a pretty nice, smooth dipping sauce for hot foods, both temperature and taste. So far I've only tried that basic mix, but I plan to experiment as able. Anyone tried it and have suggestions?
