If that’s their rationale I can buy it. You cross the line of reasonable force then there is no excuse an officer can use for their actions.

My guess is that this is the rationale. The fact is that also as an officer of the law, you need to be held to a higher standard in the first place. If cops quit over this, they weren’t doing this to serve society, they were doing it to lord it over people. Chauvin had every opportunity to relax his force and take care of the man in his custody. He failed to do so. I can see 2nd Degree murder being overturned on appeal, but the manslaughter and 3rd degree charges are going to be harder to shake.
