Today I worked on a recipe, cause I'm a faggot for cooking shit:
chorizo 6 3 inch links
dandelion bitters 3-4 cups
firm tofu, drained 1/2 block
garlic 1 tbsp
olive oil 2 tbsp
honey 1-2 tbsp
egg roll wrappers
cilantro to taste
salt and pepper to taste
Brown chorizo in pan on medium high until just done in 1 tbsp olive oil, remove retaining liquid. Ad 1 tbsp olive oil and diced tofu, cook through, when almost done . While cooking chop dandelion greens, add to pan and saute together until greens are tender.
Remove from heat and transfer to a bowl, add honey, salt and pepper and mix. Remove skins from chorizo and crumble, add to tofu and greens with 1/3 retained liquid and mix to even consistency.
Place 1 egg roll wrapper at a time onto work surface, with a corner pointed toward you, spoon 3 tbsp of filling into middle lower half of wrapper. Add sprigs of cilantro. Roll bottom, fold in corners and continue rolling, wet top corner with warm water to seal. Continue until chorizo mix runs out. Place rolls seam side down on a baking sheet lined with parchment paper, lightly spray with cooking spray.
Bake rolls at 425 for 18-20 minutes until golden brown.
I still need to roll the shit and bake but the insides of my rolls are fucking nice. Even if I dropped my 1 litre jar of diced garlic on the fucking floor and had to spend 10 minutes getting the fucking garlic off the walls.
