For the N64, you're outta luck since there's exactly one RPG on the whole system and it's bad (Quest 64).
PS1's got some better options. Obviously FF7/8/9/Tactics are there, but of the ones I've played and can attest to their quality there's also Parasite Eve 1 , Front Mission 3, and Brave Fencer Musashi (although that's more of an action RPG and might be harder to handle with a touchscreen). Stuff I haven't touched but heard good things about includes Vagrant Story, Xenogears, Valkyrie Profile, and the first 3 Persona games.
If your phone can do PS1/N64 it can probably do SNES which opens you up to stuff like Chrono Trigger and FF6.
Same as what Smaug said though, you're probably gonna have a better time with CRPGs than JRPGs. I can highly recommend both Star Wars: Knights of the Old Republic games (the second one especially), since they have phone ports that apparently work pretty well. KotOR II's phone version even has support for the Restored Content Mod, which is absolutely essential.
