More grounded and nuanced? Are you having a laugh? They didnt make anythin grounded and nuanced, it was just shit writin tryin to plug up the holes. No matter how profitable it was, one thing was clear is outside of the 3 OG movies, nobody knew what to do or where to take this franchise, the prequels were a badly written mess, the SWEU ranged from laughble to cringe shit (Jedi cannot fall in love because they can apparently make black holes when angy, Sith zombies, Zombies an etc.) So what is going Disney isnt some weird sacrilige or whatever SW neckbeards cry about, it pretty much just shows how flimsy a idea of a franchise this was begin with.
Looks like you really didn't know the EU very much. They added so much nuance to a basic story that it made Lucas an emperor of a corporate empire that was once the envy of everyone in Hollywood.
Also, the Jedi were made to be flawed from the start to explain why guys like Anakin fall. The Prequels were fine; they weren't perfect by any means, but they were good action movies with some decent commentary on politics at the time. [LOL DON'T TRUST POLITICIANS WITH ABSOLUTE POWER] It's way better written than anything 40K has cooked up, since the writers for SW aren't beholden to a status quo. The Republic can die, the Empire can die, the Jedi can die, the Sith can die. Hence why it actually has stakes on the plot.
Also, Jedi can't make black holes when angry. When have we seen that? Most Jedi who go mad snap people's necks with telekinesis or shoot lightning from their fingers. Also, the Dark Side users playing with life and making zombies makes sense considering that they sought immortality; and it was just a subsect of Darksiders who used zombies, the rest of the Sith just used soldiers or robots like everyone else.
Disney wouldn't spend 4 billion dollars on a fragile franchise. It was making money hand over fist and had a bigger fanbase than 40K ever had. But what they did was throw out all the lore that drew people to the franchise anyways, because spoiler alert, most fans don't watch the OT on repeat. They've been reading the books, playing the games, and passing them around for decades, and to be told that none of it matters just so some newbies won't get lost pretty much caused the fans to move on. Especially since Disney showed that they're willing to decanonize whole segments of the lore just for some movies to attract newbies, the fans who actually spend money on books and games just decided to wash their hands of the franchise and move on. Sure, they'll watch something like the Mandalorian if it's interesting, but if it's not, they won't care.
SW fans actually have backbone; they don't take it up the ass from Disney, and they certainly made more than a few complaints towards Lucasarts/Lucasfilm in the old days when some of the products didn't live up to their standards. [The Legacy of the Force and New Jedi Order novels, Force Unleashed 2, some of the Republic Commando books] Hell, their anger over TLJ insulting Luke caused the SOLO the movie to bomb. Meanwhile, GW raises prices and rapes the lore in half to sell more minis or to placate some nonexistant group of people, and 40K fanboys continue to buy the slop even though 3D printing renders it completely obsolete.
You can bitch about SW fans all you like, but the fact is, they actually had the moral strength to walk away from a franchise once the company tells the fans that they're too toxic to hang around with. Meanwhile, the smelly dice-throwers of the 40K fandom continue to take the abuse from GW up the ass, from the price hikes, to lore rape, and the pontificating, and yet they continue to buy like good little boys and girls.
