I'd have to powerlevel myself too much to go into specifics, but there's a highly regional dip from where I grew up and lived most of my life. It's a smoked fish dip, broadly speaking, but the fish used isn't commonly available outside a small region, and the recipe is different than anything I've seen elsewhere. You can get smoked fish dips elsewhere, but it's not THIS stuff, not by a long shot. I've even tried to replicate it, and I can get close, but without the particular smoked fish this recipe needs, it isn't the same. And this isn't just, like... some random dip. People who go to this area on vacation or something, this is a known thing, it's a part of our regional food culture. Local grocery stores and fish markets and stuff all have their own slight variations on the recipe, places pride themselves on their secret recipes for it.
