Oh, don't get me wrong. I loved the dark alliance and Champions of norrath. But, the core BG games would be an absolute snooze-fest if Dave started a REAL rpg up. Hell, even Neverwinter Nights would be painful to see. Most of his audience would be too young to remember the release, let alone understand how the fuck the game works.

Here's the thing, the line is pretty thin. If the game is to hard and phil sucks it would become boring to watch. Phill could never play Fallout 2 or Rimworld or any strategy games like that. But it needs to be hard enough so he doesn't breeze through it without reaction, like he was playing that fucking Disney village game a few months ago and it was beyond misery to watch. That's why Fromsoft games are best things he plays, when the new Armored Core comes out I bet that will be fun to watch him rage at.

Morrowind is way too easy to break

and as much as I love the game, the combat is utter trash

He already played Morrowind for a while and it is now on indefinite hiatus because he disliked it for the reasons you laid out + the game refusing to spoon-feed him.

But on the subject of old games that would give us salt, Symphony of the Night. It has a weird difficulty curve (regular enemies get easier but bosses get harder as the game goes on) and requires exploration + some of the segments require extremely precise platforming/combat.
