What Have You Cooked Recently?

For everything not shown, I marinated some good chunks of cod and a pound of jumbo deveined shelled shrimp in just salt, pepper, and three cloves of garlic. (Throw these in after the whole stew with the coconut milk incorporated comes to a rolling boil, then immediately turn off the heat and let it sit - the shrimp’s texture will be out of this world.)

the tomato shit you see in the blender is just a can of whole tomato, with the juices, a whole onion, a bunch of cilantro, and some salt. Added a *ton* of lime juice to it once it was thickened with the bell peppers.

the roasted potatoes were just drizzled in olive oil and dusted with garlic salt and black pepper and cayenne and roasted at 450F for 25 minutes, threw those in after I saw the seafood was cooked through. They were fucking delicious, but you can totally skip them and do either a side of rice or just the soup as it is



 
I finally bought a 12 pack of Mason jars, so I’m doing a ton of experiments with fermentation and pickling right now (I may even make a thread soon, since I didn’t see one).

I made a second attempt at hot sauce - came out kind of underwhelming (good heat, no flavor), but I was left with about 2 cups of hot pepper mush, so I’m going to try making hot pepper miso.

I’ve also pickled some mozzarella balls which came out good.

and my most recent from last night was pickled apples - I dissolved 1 cup of brown and 1/2 cup white sugar, plus nutmeg and cinnamon into a 3:5 solution of White Balsamic to Apple Cider Vinegar. Poured in a mason jar, left overnight. It’s like apple pie in a jar.

Are you trying the miso from scratch, or mixing already fermented miso with chilis?

gonna try from scratch. It’s leftovers from straining the hot sauce through cheesecloth, so I figure if I’m going to throw it out anyway, I might as well give this a shot. I have a ph tester, so I’m not too worried about making any fatal mistakes, so I figure I’ll just keep throwing stuff at the wall and see what sticks

i also bought a bunch of pepper seeds and patio pots, so I’m going to try growing my own this summer. not sure why out of all the hobbies I pick up and drop this is the thing that stuck, but here we are.

Me and mom made a cheese pizza. Initially we wanted to make a calzone until i pointed out that we don't have ricotta cheese. We added oregano on the sauce prior to the cheese.

Made pudding multiple times in the last week. Was going for tapioca pudding, but settled on a chocolate/cinnamon/coffee sort of mixture. Eggs are a bitch to work with and corn starch turns out alright but clumpy. I dunno, maybe I'm still missing something.

I have some spring roll skins I have nothing to do with in case someone's got suggestions.

Overnight oats is a great breakfast and easy as shit. Shakshuka also looks good and could work for any meal, but I'm not a fan of tomato sauces so I haven't had it.
 
Just made this and it's amazing for how simple it is whole recipe in literally 5 1/2 minutes. Make sure and add lots of hot sauce and lime juice. Exact recipe is in the description but it's dead simple.

A sweet rice dish.

You basically cook a type of shortgrain rice (with spices or just sugar) in milk for ~3 hours in your crockpot (or less on the stove) and have a creamy, sweet and delicious dish.

I always called this "rice pudding," but I guess that means something different to Bongs?
 
I'm making stir fried haddock with peanut noodles for dinner. Not sure how this is gonna turn out, it's far out of my comfort zone. I originally thought of this idea because it's too damn hot out to use the oven, and I haven't had stir fry in a while. Even made my own peanut sauce for the noodles and a soy sauce based marinade for the fish.
 
I like thai peanut sauce. How flavorful are the noodles?
Just got done eating, the noodles ended up fantastic. Almost like the Thai peanut noodles you would get at the restaurant. Tbh, I just used regular packaged stir fry noodles, which are not too terribly favorable on their own, and tossed them in a wok with my homemade peanut sauce. Absolutely delicious after letting the noodles heat up in the sauce a few minutes.

The fish, however will need some retooling. I used way too much soy sauce and the salt overpowered the other flavors in the fish. Maybe next time I'll do chicken or shrimp instead and cut the soy sauce in half.
