For everything not shown, I marinated some good chunks of cod and a pound of jumbo deveined shelled shrimp in just salt, pepper, and three cloves of garlic. (Throw these in after the whole stew with the coconut milk incorporated comes to a rolling boil, then immediately turn off the heat and let it sit - the shrimp’s texture will be out of this world.)
the tomato shit you see in the blender is just a can of whole tomato, with the juices, a whole onion, a bunch of cilantro, and some salt. Added a *ton* of lime juice to it once it was thickened with the bell peppers.
the roasted potatoes were just drizzled in olive oil and dusted with garlic salt and black pepper and cayenne and roasted at 450F for 25 minutes, threw those in after I saw the seafood was cooked through. They were fucking delicious, but you can totally skip them and do either a side of rice or just the soup as it is
