What Have You Cooked Recently?

Since I was curious about foods being made with things we think of as waste, I decided to look up foods made with blood in them. I stumbled across sanguinaccio dolce and was incredibly curious about it. Went out to get some pig blood and made it last night. It's actually quite tasty! Such a rich, chocolatey flavour to it with a nice hint of cinnamon and slight metallic tang toward the end. It is absolutely something I'll be making again.

I've recently started making a number of cream-based soups. Broccoli cheddar, like you get at Panera is easy to make and quite delicious. The basic jist of the recipe is a proportion of 2 cups broth, 2 cups milk or cream. Saute an onion and carrots in the pot you intend to use. For the carrots, there are special peelers that make little straws of whatever you are peeling. If you don't have one on hand, use a regular peeler on the peeled carrot and chop up the peelings. Then add at least 4 cups broccoli florets and heat them up. Add the cream and broth, salt and pepper, with a little paprika and garlic powder and simmer. Then add a cup or two of grated cheddar cheese and stir together. Best served with a slice of sourdough bread.
 
I'm on like week four of I'm spending all of my money on bills and christmas presents and the only thing I can afford is a ten pound bag of chicken leg quarters for five bucks. Last week was baked drumsticks with boneless chicken thigh stir fry and the chicken thigh bones used for chicken noodle soup. This week I splurged and I'm cooking two bags of leg quarters on the smoker and making cream corn and macaroni salad. Living the Miller High Life. Miller beer sucks btw. The chinks will run out of things to do with rice before I run out of things to do with ten pound bags of leg quarters.

This is seriously the best poverty meat unless you can get just thighs at a similar price. I like getting a huge bag of these and just separating them and putting them in freezer bags in meal-sized portions, or just roasting them whole. Or de-boning the thighs and use them for a protein in some rice-based dish. Or just frying them.

I'll never run out of things to do with them.

If I'm really energetic I'll save all the bones, however I made them, fried or otherwise, and make broth out of them (even leftover bones from deep-fried chicken make a decent and more "cooked" tasting broth). Or just make gravy with them that I can keep and use for more bland and flavorless parts like breasts (the most overrated and overpriced part of the chicken).

Chicken breast is the second worst meat after any part of a turkey. The great thing about chicken bones is that the dog will eat them no matter how many times they have been cooked and help save on dog food.
Did you get younger? I don't know how I feel about your new pfp. That's not the John I know.
 
Followed some recipes for "smash burgers" and it's probably now my go-to favourite as a quick meal. I feel like I've been making burgers wrong for years. Quickly whipping up a burger sauce with mayonaise and hot sauce definitely feels like cheating slightly.

Also gave some "smash potatos" a go - boiling some baby potatos, breaking them apart, then using some oil mixed with paprika/onion/garlic and just dousing the fuckers before roasting them in the oven. Surprisingly tasty for something ludicrously simple.

I don't know if "smash" food is some sort of current trend, but I'm definitely not complaining about the results.
 
Dogs can choke to death on the splinters from chicken bones.
I had a dog that choked to death on a chicken bone. He was also born without front legs. He had two nubs. Now days I could probably put him on Instagram and make a cool million. He would scoot around and he was a good pup but a chicken bone was his demise. Every other dog I have had has had no problem. Darwinism at work.
 
Going to try grilling some chicken breasts and making a "grilled chicken parmesan" tomorrow. I've never cooked meat before (always just bought frozen microwavable chicken) so pray for me to not fuck it up and poison myself.

Part of me wants to ridicule you, but if you're young and don't know how - you're likely going to overcook chicken out of fear for a while. Chicken parmesan is a good way to mitigate how dry it might wind up being. Just remember the general rule - if the juices run clear, you're in the clear.
