What Have You Cooked Recently?

Potato and cabbage soup with bacon and a side of soda bread for a dinner I hosted. For the bread I successfully substituted buttermilk with Greek yogurt and a little milk to thin out at a 1:1 ratio.

Dessert was a batch of cinnamon rolls using milk bread dough as the base. Tried out a new technique I read somewhere of pouring half a cup of heavy cream over the rolls before putting them in the oven which keeps them moist and fluffy and caramelization on the bottom. Delicious but big time calorie bombs so I made sure everyone took the leftovers home. specifically away from my home.
Yeah, my sister has been doing the Heavy Cream trick with cinnamon rolls for a while. It's miraculous.
 
I like making smoothies because I think it helps curb my cravings for most other sugary things. I don't have any pictures to post right now, but if I feel like making another smoothie, I'll take a picture. So far it's mostly been strawberry or mixed berries. Next time I make a smoothie I'll also write down what I use in it.
 
Making lasagna now. Asked Nigel whether he would prefer getting sent to the grocery store for a couple of ingredients, or getting sent to pick up a frozen lasagna. He picked homemade. So I have a freezer bag of tomatoes saved from last growing season simmering with garlic, onion, salt, pepper, oregano, lemon thyme, bay laurel, and rosemary. Added a pinch of sugar to the sauce because I am a fat American and I like the sweetness of frozenslop lasagna. Any suggestions for your favorite lasagna recipe/ingredients? The sauce will be meat-heavy with leftover pork that isn't being eaten quickly enough as well as some bacon.

So we're having classes about alternative cooking where we swap ingredients for "healthier" alternatives, or to restrictive diets... I made chicken tenders but with the alternative breading being flaxseed flour, milk instead of egg... It was so bad the chef just looked at me and said that we should ditch the milk and go with the egg. And the icing of the cake, the tendies were baked instead of fried.

I hated every thing about that. My teriaki sauce was good though

Eggs are way healthier than flour and milk.
 
Made a smoothie today for me and my old man. My only regret is that I used plain yogurt and thus made it way too tart.
My recipe went as follows:
  • 1 cup of fresh strawberries
  • 1 cup of frozen strawberries
  • 3 cups of low-fat plain yogurt
  • 1 tsp of sugar
  • Strawberry puree (Did not measure)

    My old man has a sweet tooth, so he just told me to add puree until he said to stop. Usually I add milk to the smoothies but I felt like that wasn't nessesary this time. If anyone has any suggestions for what I should add next time to make my smoothies better, I'd love to hear them.

Nothing special. I’m a mediocre cook, but basic.

I made breakfast for dinner tonight.

Strawberry lemonade pancakes. With grated lemon rind, I had one left on my Meyer lemon tree that’s still inside for the winter. And I made fresh lemon whipped cream. I had to store buy my fresh strawberries.

over medium eggs I gathered fresh from the chickens

Thick cut maple bacon. A gift from my aunt and uncle and their farm.

Hash brown patties from trader Joe’s, because I was lazy.

I also made fresh pineapple, orange, ginger, celery juice.

Very simple and quick meal and The kids were happy.
 
Fillet of trout with pommes fondant (potatoes). I haven't made trout before but I cooked it the same as walleye and it was almost as good. I looked up trout recipes but decided to do my own, I believe that all white fish need are salt, pepper, lemon, and butter and all those online recipes like to get way too complicated. If you've never made pommes fondant I highly recommend. They take a while but it's worth it. When cooked correctly they're like little pockets of mashed potatoes encased in delicious fried potato.

My dog accidentally injured herself a few days ago chewing an itch on her back leg, bit too hard and nicked a vein I think, bled like a pig all over the place and freaked her out pretty bad to the point she had difficulty standing up on it for a few days and wouldn't eat for awhile. Took the better part of a day for the wound to stop bleeding. So when she started improving yesterday I made a rich, meaty, fatty stew for her to encourage her to eat and help her feel better. Mostly a whole small beef brisket cubed up with a pound of minced pork belly, mini potatoes, some broccoli, yellow beans and carrots in a thick gravy, served over rice. Must have been hungry because she ate three heaping bowls of it over rice and then flopped out stretched out in her bed, so I think it definitely helped

Orange juice works as a good liquid option and sugar replacement since it's so sweet, and spinach is pretty good if you want the vitamins from it. Doesn't really do much flavorwise but does make it neon green. My preferred smoothie when I don't feel like eating anything in the morning is frozen mango, frozen pineapples, spinach, yogurt, and some OJ. Sometimes I mix in some ground flaxseed or chia seeds as well. Neither seed really adds flavor but they're simple fiber options and chia seeds have a crunch that reminds me of pop rocks. If you do add either seed I'd add them after blending since they can be obnoxious to clean out, chia especially likes to stick to my blender.

Coconut milk would also be good if you like coconut flavor. It's not a smoothie but I also like to make chia "pudding" with it by putting chia seeds in the milk and letting it soak over night and then topping with some mango.

I made some shrimp alfredo for the first time, never realized alfredo sauce was just butter, cheese, and cream. Unfortunately it doesn't come out cheaper than buying a jar but it does taste superior.
 
Slept way in this morning, so I committed to the lazy weekend bit and just made a fridge-cleanup hash. hot link sausage, yukon gold potatoes, shredded carrot, garlic. I had a ton of leftover ingredients from a trip to the Asian market so I added in some dried chilies and choy sum as well.
 
Improv chicken tortilla soup using a rotisserie chicken. Had a small bowl once I got over my nausea post-watching a foodie beauty eating video and reading the srs/grs thread, added a little cheddar and a teaspoon of plain yogurt. Outstanding. Most of the rest will be frozen, some refrigerated, to feed me for days.

Cat is living large on chicken, but I’ve got > 1/2 of it left to use. I can make a good salad with the chicken and raw vegetables, but I can’t eat enough salads to finish it before it goes off.

So I need ideas for another dish for the leftover san Marzanos, tomato paste, rotisserie chicken, and peppers. I also have plenty of basics - onions, garlic, spinach, all the spices, pastas and grains…some kind of baked thing? Halp!
