So i did a weird thing today. We were making gnocchi and there was some spare gnocchi dough, which i shaped in bastonets and after boiling i seared them in butter and garlic. Then i covered them with ossobuco ragu. The white stuff on top is a gorgonzola cream we did
 
baked some brownies and boy did they turn out well. i was always a believer in bigger pans for brownies since bigger pan = more brownie, but i decided to go with an 8x8 tonight and it is night and day. oh my god, they're so much better when they're thicker. learn from my folly, use smaller pans for brownies!

Yeah, brownies need a high edge-to-center ratio.

This is optimal.
 
I had enough leftover ground beef for a burger patty but the only buns I had were soft bagel buns. And I can't have a solid patty when the bun has a hole, that would just be silly. This was really the most logical solution.

I'm gonna be honest with you. This burger immediately reminded me of the chicken cutlet causing salmonella post from 4chan (I believe). Iykyk I'm not gonna post it here. With that said, I want to try a bagel burger now. Looks good.

Tonight we tried our hand at homemade chicharon. I prefer the Colombian style that uses a chunk of pork belly with slits in it. The wife bought cubed so we did it with that.

Came out deliciously crispy. I think we need to work on the seasoning but the meat was right on.
 
I don’t think I shared this already but if I did just give me puzzle pieces. I believe my only post was the steak and eggs.

The other day I cooked a burger with some habanero peppers in it (I like spicy), bacon, cheddar jack cheese, and a medium duck egg. (Also tater tots to go with it but they’re just tots). Gosh it’s so damn good. Having that bread soaked with the egg yolk is just delicious. It gets messy and all over my face but damn it’s so delicious. Might be what I have for lunch tomorrow now.

Carbonara Tagliatelle al dente (chefs kiss)
Vegetable/olive oil tagliatelle pasta with white garlic and spices
Burger (borger)
Various Risotto dishes.

If you want recipes just ask and ye shall receive, it's relatively easy to get the ingredients at your local market. Theres also a poor mans bolognese which takes time to cook but it's easy, around 2 hours minimum, for max flavor up to 5 hours.
 
I made American-style goulash the other night, and it was pretty good. Not as good as my grandma’s recipe, but I couldn’t find her recipe.

I did find her recipe for carrot casserole which calls for sliced carrots, cream of mushroom soup, French fried onions, and cheez whiz. I’m thrilled; that’s one of my favorites.

So we don't have a deli slicer. I played ninja. Sliced some thin. Mrs basso got a chicken buffalo cheese steak. I used left over Mariana sauce with little hot sauce.

I'm looking forward tomorrow, doing beef ribs two ways one in oven like 8 hours dry rub 4 in crock pot like a "Mississippi" pot roast . We'll see how they turn out.
