What Have You Cooked Recently?

Making Filet Oscar at home for the first time. We've found that the packet version of Bernaise sauce from Knorrs comes out great, we've learned the best way to grill both filet and asparagus, so the only thing needed was crab meat, which I got canned. It came out pretty damn good.

Whole tenderloins were $9.99/lb which is a crazy low price, and my family is enjoying it. Fondue yesterday, Steak and eggs with filet this morning, and this for dinner, with beef stirfry done with filet for tomorrow.

I'm making Rieska right now. For those not in the know, it's a Finnish flatbread. Super delish.

Made a Croque Madam - Slimy style. Basically used scrambled eggs inside instead of the fried egg on top. Spread mustard on the bread, ham, scrambled egg, bit of cheese, covered with Bechamel sauce. Looked like a mess and couldn't brown the Bechamel, but it tased good.

Used the remaining Bechamel sauce in a Moussaka styled Bolognese sauce. Dryer and with cloves, cinnamon and some other spices, then added Bechamel to make it wetter along with the water from the pasta. Not bad, heavier than other sauces, but tasty.
 
One-pot pasta with tomato sauce. Cook minced garlic and diced onion in olive oil, then add a pound of ground beef and brown. Add 28oz can of crushed tomatoes, basil, oregano, salt, sugar, and bullion. Mix and bring to a boil. Add a pound of pasta once it's at a boil and add water to cover. Cook until the noodles are done and the sauce has been reduced down to the right consistency - cover to do more noodle cooking, uncover to do more reducing, add more water if covering isn't enough.

Shit's fucking delicious.
 
Didn't feel like cooking so made chicken burgers. I just add cheese and bacon, let them fry in the pan and put them on brown buns with a mayo/curry ketchup mix sauce.
 
campfire meatballs with some garbanzos. It was all store prepared really but we were backpacking and it sounded really good and easy to dish up around the fire. Took us awhile to get the coals right but it turned out nice in the little camping saute pan I have. Cooked the meatballs over the coals until they were nice and golden brown on each side then added the garbonzos (they were middle eastern spiced which worked) and stirred everything up in the pot as a sort of backpacking hamburger helper.

I gotta try some of those korean MREs Steve raves about next time we go out.
 
Basil pesto with Parmigiano Reggiano, roasted garlic and pine nuts.

My boyfriend and I just got home from vacation, and we wanted to start eating healthy, but we weren't ready to give up 3 course dinners. So I made watermelon cubes stuffed with feta and basil (topped with cracked pepper), fired up the grill and made greek dressing foil pack chicken with peppers, onions, zucchini, grape tomatoes, and sweet potatoes (called for regular ones, but I didn't have them in hand). I made grilled pineapple for dessert.

leftover surprise!
about a third of a costco rotisserie chicken's meat ripped off the bone, half an onion, some minced garlic, a can of mushrooms, a packet of taco seasoning, a few tablespoons of butter
stir and cook it a lot with a lid so the moisture collects and gets the taco seasoning going
turned out okay

turned out okay

One of my favorite foods is pyttipanna("things-in-a-pan") where all the odds and ends from the week gets used. The butt of a roast, couple of meatballs, piece of smoked ham, a leftover sausage, dice it all up and fry it with diced onions and (boiled) potatoes, salt and pepper, fry an egg or two to go with it and add some pickled beets or pickles.

It doesn't look like much but it is so good, a highlight reel of the past weeks dinners.

A pro-move is to fry the potatoes alone on high heat to give them some color/crisp then lowering the temperature and adding everything else.
