What Have You Cooked Recently?

I'm on the road. Down to the supermarket and back to the hotel room. Frozen bowl of rice, kidney beans, corn, spinach, tomatoes, zucchini and something unidentifiable, but plant based protein. 4 mins in the microwave. Can afford to get gut ache just now. Emergency dining.

It veers towards cooking since I add stuff.
My plan was a big box of white Castle from Walmart and trick them out with jalapenos and cheese and shit.
They were out which was some total bullshit.
I got those beef and bean burritos family pack instead. They worked nicely enough for my purposes.
 
It isn't cooked *yet*, but I am marinading some chicken thighs in a soy sauce-based marinade for this week's protein. As an aside I think thighs are better than breasts for the standard "diet" food because of the higher fat content and better flavor. Despite the higher fat, a single portion is still only 250 calories so you're not gonna ruin your (Keto?) diet.

Recently took two 1lb sirloin roasts, gave them a salt and pepper dusting and after letting them chill in the fridge overnight grilled them to a nice medium rare for pit beef sammies
 
Cheesy garlic muffins.

Cut a can of biscuits in half twice.

Toss the biscuit quarters in a bowl with half a stick of melted butter, 1 tablespoon of garlic powder, 1 tablespoon of oregano, 1/2 teaspoon of salt and a good handful of shredded mozzarella cheese, parms nice too.

Put 3 peices of said cheese & spice covered dough in each slot of a greased cupcake pan and bake at 375 for 18 minutes.

Wish I'd taken a picture of it but I made a honey custard pie with wild blueberries in it

Little bit of background, where I'm from (way back in the woods) we all have a recipe for honey custard, some people make creme brulee out of it and some people put it in a pie, my mom's and my version is really light and fluffy and acts like cheesecake so we always put it over a graham cracker crust and since blueberries grow wild out where we are in their hundreds we always mash them and swirl the puree through the pie itself, topping the whole thing with blueberries

It disappeared very quickly, the honey was locally sourced as well, I got some real good butter and cream from one of the local farmers and eggs from another, cornstarch sugar graham crackers and vanilla from the store of course, and yeah, it was awesome
 
Today I made something that might either be godly amazing or absolutely vile...or most likely just pretty nice but nothing special

Krazy, Karribian, Kimchi

TLDR basic bitch kimchi but with added carribian spices and seasonings. Should be nice and fermented this time next week so I will give yall a review of the finished product by then.

Used a can of flaky biscuits instead of southern. The way the three pieces come together and flake up, how the cheese crisps, and the spices are very visually pleasing. They taste ok but it is a quick and easy way to transform some cheap ingredients. Next time I’ll do Italian seasoning instead of just oregano.

I also made kielbasa stir fry and rice with pineapple and mango preserves. Also good.
