What Have You Cooked Recently?

Taking a page outta Monster Hunter, my SO and I tried our hand at recreating the food in Iceborne. The only thing we didn't have was the cheese, but it was still an absolutely delicious feast.
We have butternut squash soup, spiced with ginger and curry,
Potatoes au gratin with a bit or rosemary and gruyere, Sausages, crusty bread, and the centerpiece of the meal: Slow-roasted beef with potatoes, onion, broccoli, and carrots. All of this served with a frothy mug of Strongbow cider.
It was pretty good, and fitting, since it's cold af over here.
 
I'm a frequent lurker of the Jack Scalfani thread and while 80 to 90% of what he eats looks utterly vile, I was curious about the pork rind fried chicken. Carbs are unhealthy, so obviously if you coat your chicken in crushed pork rinds instead of flour before dunking it in hot bubbly oil it becomes healthy!

I was excited to actually come across a pork rind chicken tendies recipe, especially since it took buttermilk and I always need more buttermilk recipes.
You marinade the chicken in buttermilk, hot sauce, salt and pepper, dredge it in egg and crushed up pork rinds, fry that shit up and lawdy you have yourself some zero-carb, keto friendly, fried tendies. They turned out even healthier becasue I did a piss-poor job of breading them and so half the batter fell off in the pan.
They're pretty damn tasty. It would be fun to use the spicy seasoned pork rinds, I used the plain ones. A healthier option would be to bake them instead of pan-fry, that's actually my prefered way of making homemade tendies. If you put them on a rack and rotate them halfway through cooking they won't get soggy.
 
I recently learned about Lemon Pepper and so I've been experimenting with that. Add a tablespoon to a pot of rice and you've got lemony, peppery rice that's amazing with chicken. Speaking of chicken, rub some on a chicken breast before grilling and it's great. I did that yesterday with some coconut rice. Super easy, but adds a nice dimension.
 
Made some oyster stew this past Friday. One of my favorite dishes, and easy to make.

Yesterday I decided to treat myself to a nice home cooked steak. It was my first time cooking steak, and it turned out really well. Looking forward to doing that again at some point.

I made a nice cottage pie last night. Nothing special, but it's cold and it hit the spot. I use a mixture of ground pork and beef which isn't exactly traditional. I added carrots, peas, and minced onion and garlic. Some flour as a thickening agent and a nice beef stock and a cup of red wine. Tomato paste and a splash of Worcestershire sauce. Mashed potatoes (obviously you can use your favorite mash recipe) with a bit of cheddar mixed in on top, salt and pepper to taste and a little paprika on top just for color. Pop it in the oven for about 30 mins. or so at 350. It's fantastic on a cold, rainy night.
 
had leftovers of a rotisserie chicken, made that into a casserole of that with a cheese sauce I didn't finish, some random slops of cheeses and cheese-inspired loaf food, and a brick of frozen broccoli, today took the remains of that and added it to a pile of ground beef and onion with various chili-ish seasonings like tumeric, paprika, cayenne, jalapeno powder, and jarred jalepeno
not bad at all for several third-generation leftovers at this point
