What Have You Cooked Recently?

Felt like I needed to eat something mildly healthy so I made a curry with green beans, mushrooms, broccoli, bean sprouts, onions, and chicken thighs. Used ghee for the first time since it was on sale at about 5 bucks for a pretty big jar. I can get why people like using it instead of oil, it smells really good like movie theater popcorn butter. Didn't feel like making rice so instead just made some bulghur wheat and poured the curry over that. Pretty good overall.
Bulgur is more expensive and less neutral than rice, but as a carb source it's pretty damn good. It has an extremely high amount of fiber and way more vitamins, minerals and proteins than rice. Goes great with spicy or buttery dishes, just like your curry.

It's also really fucking easy to "cook" since you don't really need to cook it, just soak it for an hour or two and you're good to go. That's why I have about 20 pounds of the stuff in my house at all time. If I end up broke as shit I have something I can eat without the need for heat, just water. Add some dried parsley, bottled lemon juice, and dried mint and you have hobo tabbouleh. It's a seriously underrated survival food.

I finally fucking did it and made beef fried rice! Followed this.

(for the rest of this post, a 'cup' means 100mL because that's what my rice cooker came with)
-cook X cups uncooked rice (1 cup rice/1 cup water in a rice cooker for Jasmine)
-cool rice in fridge for a few hours

-cook steak to desired doneness, cut into small pieces (1/8" thickness) (I mixed in 2oz/X, you may want more)

-put in 2/3 X tbsp peanut oil in pan
-scramble X eggs and cook on high/medium-high heat, once done leave aside (do not remove oil afterwards)

-keep medium-high heat
-add in 1/3 X tbsp peanut oil in pan
-put in X cups frozen mixed vegetables (peas, carrots, corn, green beans. You can find a package at the store under the label "mixed vegetables" in frozen) and chopped onions
-cook 3 minutes

-add in cooled rice and meat
-pour in X tbsp soy sauce
-cook 5 minutes

-add in garlic powder, pepper, sesame oil, and green onions to taste
-Stir
-serve

I didn't eat all day and took my doggo for a 2 hour walk so I could have my fav, Breakfast for Dinner! I soaked cube steak in buttermilk and spices for a day and used the buttermilk to make fresh biscuits and country gravy. Had that shit with some scrambled eggs and potatoes with pepper and onions. Mixed it with pineberries, blueberries, and dragon fruit because I fucking hate fruit but I'm suppose to eat this shit.
 
I made some vanilla waffles for breakfast and topped them with homemade apple-jam the mother in law gave me some weeks ago. 10/10 would go for a sugar rush for breakfast again.

Later, I'll probably pan-fry some dumplings with veggies and/or eggs.

I can't agree more - that stuff is incredibly delicious. I've been hooked on the Vermont Curry for months now.
 
About a week ago I made a pair of country-style pork ribs, after one of my coworkers suggested some time back that I try them instead of the bone-in ribs I usually make. Covered them in spicy brown mustard and sprinkled my seasonings on them - I use mustard because I cannot stand the sweet barbecue sauces that are common here in Texas - and since I'd been needing to use them, I put some small red potatoes and carrots in a foil pouch to cook next to them for the whole 4 hours at 250F.
Holy shit, it came out wonderfully. The potatoes and carrots could be cut with a fork, and worked better than I thought they would at sopping up some of the fat and juices from the ribs. I've used rice for that purpose before but it's hard to beat good old baked potatoes sometimes.

Going s&b or glico? Also, try freezing the leftovers in an ice cube tray and making karepan. Or using seafood mix for the protein
 
Had about 3 pounds of beef chuck roast sitting in my freezer, and I found a perfect recipe for that amount where you marinate it overnight with balsamic vinegar/dijon mustard/sugar etc and then grill it over indirect heat. Although trying to grill in February was probably a mistake, it tasted amazing and I'll definitely be experimenting with that marinade again, maybe with a different cut and direct heat or a pan.
 
Tried using a jar of Patak's Rogan Josh curry sauce tonight. The end result was bland at best, but I'm willing to blame that on the ingredients I was using. Guess that's what I get for deciding "Say, I have this sad bag of individually frozen chicken breasts that's been sitting in my freezer for roughly ever, I need to use it and clear up some room in there!"
It had probably been sitting in there for a damned reason, idiot.

I am currently very slowly cooking Amish style chicken and dumplings in the Dutch oven. I am about at the point where I could reasonably just rip apart the chicken, strain the broth and add the noodles, but I am going to let it slide as long as I can stand to while fairly ravenous and in a house full of chicken aroma.

My one problem with Dutch ovens in particular is they're ridiculously heavy and unwieldy and just to take a look at the food, you have to drag this thing out with gloves on, but I just did and it's looking really nice. I hope to have this stuff on the table about the same time as the freezing rain starts coming down.
 
We’re cooking hickory smoked bacon-wrapped filet mignon (you Aussies make a damn fine cut of dead cow, holy shit!) The dude pan seared them and then they went into the oven at 375 and were rotated every few minutes.

Sides are skin-on mashed potatoes with kerrygold butter, and some skinny but flavorful green beans.

Beverage is cava we found on clearance for $4 a bottle.

The filets were free due to a delivery service error charging us for something we didn’t order.

The house smells so good right now.
