What Have You Cooked Recently?

Steak.

Just fucking ribeye steak.

Salt and pepper rub a day before. Reverse sear, slow and low until the thing was almost falling apart, but still bleeding, then char the surface in a skillet (olive oil and butter, because fuck you arteries). Served with boiled new potatoes, broccoli, green beans and a delicious lisboa. Also a creamy mushroom, brandy, and garlic sauce. There was a little fond left in the skillet. Fucking a.

Prior to that, pasta sauce that was pretty much just canned tomatoes and basil, but I threw in a can of anchovies and some dried porcini that I got from my father in law. At least I think they were porcini. Why are my hands speaking dutch?

Made one of the few Thai foods I really like. Pineapple Shrimp Rice. Shit is really good and pretty damn easy.

1 red bell pepper, chopped
1 green bell pepper, chopped
1 15oz can pineapple chunks in juice
1 13.5oz can coconut milk
1 1/2 cup jasmine rice
2 cups frozen, deveined, precooked small shrimp
1 tablespoon sambal oelek
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon black pepper
Juice of 1 lime
1 shrimp boullion cube
1 cup water

Just throw together everything but the shrimp and rice ina pot on high. Bring to boil and add rice. Lower temperature and simmer about 15 minutes (giving an occasional stir to discourage sticking) until most liquid is absorbed and add shrimp. Shrimp will come to temperature as the rice finishes cooking.
Serves 4

Shit is tasty as fuck and easy to make.

leftover surprise!
one and a half taco seasoned chicken thighs
one fried chicken thigh
most of an onion
one and a half slightly dodgy bell peppers of various colors
some garlics and shit
tail end of a pack of ham cold cuts
fried it for a bit
some leftover beans and sauce
let that cook up
3/4 a cup of chicken broth with some rice
two eggs that were best by a week ago, stood on end but didn't float
stirred that in
some stovetop stuffing
mixed the fuck out of it
let it cruise

shockingly not toxic and downright tasty

Made sum wibs!

Gave them a dry rub the day before, set the oven to 300, wrapped this up in foil and cooked for 1 1/2 hours, took the foil off and cooked for another hour. Slathered the rack with homemade sauce and put it under the broiler for a bit.
I was following a sauce recipe where I had none of the ingredients but could reasonably bullshit together something. It was a combination of homemade nectarine jam, ketchup, soy sauce, chili powder, and ginger. Turned out very good even though adding ketchup to jam felt like I was doing something horrifying.

I've discovered the secret to tender, not dried out to twigs roasted asparagus: cover it loosely with foil for the first 5-8 minutes of roasting and then take it off. This effectively steams it but the tips will still get crispy and browned.

Fettucine al burro with Julia Childs Butter Peas and roasted chicken drumsticks.

(I prefer to use butter from grass fed cows)

Recipe:

Fettucine al burro (traditional Fettucine Alfred)*
Buttered Frozen Peas (I prefer shallots)
Roasted Chicken was from the market

*I prefer heating remaining pasta water using the metal mixing bowl as a double broiler to melt the butter and cheese.

I finally made this recipe for 3 ingredient smothered chicken that I saw on the Glen and Friends youtube channel. I did it by the book except using half the butter and it turned out excellent. I love minimalist recipes like this, but next time I will probably add some garlic and herbs and whatnot to the gravy.

basically cruise control for all veg that you hate is "just bake it"

I made weed brownies and got couchlocked for at least 12 hours last Saturday.

Ended in a debate with the SO over weather, from a philosophical standpoint, Jimmy Stewart or John Wayne was "The Man Who Shot Liberty Valance", even though Wayne was actually the one to do the titular deed in a more literal sense.

Going on a vegetarian kick for a bit because I feel sad when I look at my rabbits sometimes and think of how someone would eat them haha. It's not that hard except for fish, which I might still eat. Probably will because I have a bunch of salmon in the freezer.
I made some tteokbokki and added some caramelized oyster mushrooms. Now that I can handle some spiciness to food, gochujang has become a really fun ingredient to use.
