What Have You Cooked Recently?

Split pea soup in the instant pot. I used homemade broth- last year I attempted to make ramen, which sucked. But the broth, also made in the IP, came out great- made with pork bones, chanterelles, shiitakes, ginger, and lots of other veggies. There was a ton leftover, which I froze. It made an excellent pea soup. I usually make it without ham, but I happened to have some, so of course I added it. Served it with a few cubes cheddar in the bottom of the bowl.

Speaking of the instant pot, I've been making burgers in there lately. It took awhile to work up the nerve to try it, (literally "steamed hams") but it will be a regular in my burger rotation now. You wrap each patty in foil and just kind of pyramid stack them in there. They come out very tender and flavorful. I think they have a more beefy taste. Plus the smell and grease doesn't linger in the air like when you cook them on the stovetop.

I came across a recipe to make homemade "cinnamon toast crunch" cereal so my bored self decided to try it. I didn't roll the dough thin enough so it didn't get crispy, more like a thin cinnamon-y cookie but less sweet. Instead of cutting it into bite sized pieces I cut it into larger squares to snack on.

Experiments don't always work but this wasn't too bad I suppose.
Sorry I'm late, but I can't believe no one mentioned it. The gold standard recipe for homemade cinnamon toast crunch is right here on this website, in the Anna Johnson thread. It's diet friendly, too!
 
I had a craving for a restaurant style patty melt. So I got ground beef, an egg, some breadcrumbs, garlic, and a few spices, made hamburgers in my cast iron pan. Then sautéed some mushrooms and onions. Grabbed a couple slices of Dave's Killer Bread and toasted them in the pan (but could not properly melt the cheese). Made Big Mac sauce with barbecue sauce, ketchup, and mayo. Then dropped some spinach on. It was delicious, even if everything was finished minutes apart. Tasted better than the Frisco melt at Steak and Shake, at any rate.

My mom's birthday is tomorrow but she has to work a bullshit overnight shift that same night, so I'm making her burgers today. Beef was fresh ground from the butcher, paired with mixed greens, heirloom tomato, and mayo/chup sauce.
 
I made a frittata with herbs (basil, mint, and sage), Parmesan cheese, prosciutto, and onion.
A frittata is the perfect dish.

I've lost count of the times I got a bunch of people who were sleeping off last's night's party to clean the house and leave fueled by a frittata powered by a couple dozen eggs and every single chopped veggie from the previous night.

It was a miracle when I figured that out. "Oh wait, it just takes some eggs to get these wasted weirdos out of my home?" Yeah!

I'm not much of an egg man outside those kinds of special occasions but I don't think anyone can deny that eggs deserve their place in the breakfast-sphere. They're the kind of thing even people who struggle to eat in the morning can consume and afterwards be like "You know, I am happy with the fact I ate that".
I can't say the same about nonsense like bacon/breakfast sausage/scrapple. Breakfast red meats are a sham.

Anyways, I'm going to make sauteed spinach and kale w/ garlic in a little while here. Also made regular sausage last night.
I feel like this is relatively common knowledge but when in doubt Worcestershire sauce is a great way to keep meats from drying out while cooking.
 
I saw a video for keto chocolate chip cookies recently. I'm not keto but i like experimenting with different recipes.

It used almond butter, an egg, brown sugar substitute, low carb chocolate chips, vanilla extract and baking soda. I put some chopped pecans in too since I had some I needed to use up.

They turned out pretty good tbh. They have no flour of any kind but you can't tell. I've started to dislike almond Flour in my keto experiments. It's texture is annoying.
 
Red Lentil and Chorizo soup, pretty good, didn't come out too thick and had a good texture, was kinda wondering if it might have been a bit too spicy, but with greek Yoghurt it made the heat die down a bit.

Almost any leftovers from vaguely Central/South-American fare wrapped in a tortilla make a great dish.

Also linguica is really overlooked and I prefer it to chorizo generally.

4. Big Firewald Cake
Ingredients:
5 cups all-purpose flour
4 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 1/2 tsp ground all Spice
1 1/2 tsp ground ginger
1 1/2 cups vegetable oil
2 1/2 cups white sugar
3 eggs
1 1/2 tbsp clean water
1 1/2 cups pumpkin puree
1 1/2 tsp vanilla Extract
Directions:
1) Preheat oven to 350 degrees F (175 degrees C). Generously grease two 9x13 inch panas with butter.
2) In a medium bowl, stir together flour, baking powder, baking soda, salt, cinnamon, allspice and ginger. Set aside.
3) In a large bowl, beat together oil and sugar until well blended. Beat in eggs, one at a time, then stir in the water. Beat in pumpkin puree and vanilla extract until smooth. Gradually stir in the dry ingredients until just blended. Pour batter softly into prepared pans.
4) Bake at 350 degrees F (175 degrees C) for about
 
Did steak tacos on the grill for the 4th. Traditional style with carne asada seasoning for the steak, avocado and diced onion on small tortillas. I go with flour tortillas as they just taste and hold up better than corn. Not quite as good as the worst shop in San Diego, but hey not bad for a gringo.
