What Have You Cooked Recently?

Thursday, I made kimchi stew. I didn't add meat to the stew because we were still kind of over it, but the stock itself was made with a few bones I saved in the freezer (as well as the typical dried anchovies+radish+kelp+white parts of a green onion) because the body of the soup is better with the collagen imho.
Friday, I made saag paneer with homemade naan and basmati rice.
Today, I made cabbage rolls. I always make a ton because they freeze incredibly well so there'll be some for quick lunches or whatever.
The kids requested loaded fries tomorrow so I might do that, it doesn't sound great to me tbh but my husband seemed pretty enthused by the idea. Maybe I'll have some of the aforementioned cabbage rolls again.
 
I was in a hurry and didn't feel like making an elaborate meal so I chopped up some chicken breasts, added them to an instapot with chicken broth, chopped onions, chopped celery and some spices and pressure cooked them until done. Then added stuffing mix. Nice quick dinner.

My cats are getting annoyed that I'm eating all this vegan shit. Cats meow. "Oh you want a mushroom? You want some lettuce?" Bitch-ass cats being mad.
Earlier in the week I sauteed some mushrooms, onions and zucchini. I spiced it up with soy sauce and some other shit. It came out gud.

My cats were being dick holes. The boy cat latched on to my pantleg when I was cooking so I was dragging him around the kitchen. Until his sister saw what he was up to. Then she attacked his ass. Literally. She went right for his ass and bit it. She's such a good gurl. Defending daddy.

For my "A window" meal prep I'm making beef and broccoli for next week.

We have several recipe threads, but they are all very old and I do not want to necropost.

Anyway, does anybody have a good Salisbury steak/poor man's steak recipe? Everybody associates it with bad tv dinners or ghastly school cafeteria food but homemade Salisbury steak/poor man's steak is actually very good as well as cheap.

I've never made this myself, but I've never gone wrong with any Serious Eats recipes.
 
Salisbury steak
I tend to lean towards including some of the following, usually it's something of an exercise in "aw, shit, I gotta use up the ground beef, like, NOW" so it's based more in what's around

dry minced onion
can mushroom that I chop up
onion soup mix
worsticher AND a dash of soy sauce
horseradish if you have it
a slug of booze, red wine, a beer, a cooking wine, nothing big
 
Made a chicken and vegetable curry this afternoon because someone gave me a bottle of Thai Curry sauce a few months ago that was near expiration. Chicken, broccoli, onions, red bell pepper, and zucchini all sautéed in a dutch oven on the stove. Sauce wasn't as thick as I like so I tossed in some potato starch and let simmer for a bit. Served it with rice and was good enough but I wasn't super impressed with this bottled curry sauce. If you like curry just get a good spice mix and a can of coconut milk.

I've always found Thai food/flavours in general to be underwhelming or gross tbqh.

Tax: Bangers and mash, proper good British nosh, non of that foreign Thai muck

Thawed the last of the frozen half-price pork sirloin lump.
Scored it and rubbed hard with "Nashville Hot" spice mix, ground tumeric, onion powder, cumin, garlic powder
It's searing in the air fryer, smells good so far
ended up too spicy, but worked out okay after paper towel and rising off the outer lining

Chicken stew. Though it tastes more akin to a chowder than a stew. Still, I rather enjoy it. I can't help but think it would be really good with a more chowder-y blend of spices. ...I will try that next time!

This is the recipe I used. I did change one thing: I swapped in some cabbage in place of beans or peas. Yes, I love cabbage. Especially in stews and stir-fries!

I've not used heavy cream/whipping cream in stew before so i was not prepared for how strong the taste was. I think next time I'll do 3/4 or 1/2 of what is called for. The recommended amount seems a bit much(at least for me).
I just did an instant pot thing today that seems really similar. Mine is more like a pot pie filling though

Made a banging moussaka thats easy to make.
(Depending on the size of your oven dish you can change ingredient amounts)

Fry sliced eggplants in olive oil.
Boil some sliced potatoes.

Brown some ground beef then add onions, oregano, cinnamon, red wine and chopped tomatoes.

Make up a bechamel. Add nutmeg, some italian hard cheese and an egg yolk or two. (You'll want to make a lot of this)

Layer your oven dish, add a small smidgeon of your meat mixture to the bottom. Layer with aubergines then meat sauce then potatoes then aubergines then bechamel.
Stick in the oven for half an hour.
 
Do you have any good tips for making time for cooking? I have a job and kids and I'm kind of in awe of how many hours you devote to cooking and thinking about cooking.
An air fryer really makes it a lot easier especially for just one or two people. Preheating takes only four minutes, and in general it cooks faster than anything but a microwave. I also do a lot of stuff in a dutch oven that just takes some chopping and sauteeing followed by a long stew.

Making a lot of something that stores well also helps. If you just cook once for something that lasts several days that's not really much time at all. Most of my dishes are pretty simple with not much prep.
