What Have You Cooked Recently?

Been meal prepping more often recently to save money and (try to) eat healthier. Over the last few weeks for lunches I've made: garlic-sauteed shrimp with rice pilaf, refried beans and cheese with Spanish rice and tortilla chips, one-pan chicken with veggies (tomatoes, zucchini, onions) alongside pita bread, and oven-baked lemon and garlic salmon with some oven-roasted broccoli and bread. Making a meal out of a protein and veggies is a pretty easy way to meal prep, though I do want to try making some soups or stews since the weather is getting cooler now. Squash soup sounds pretty tasty, or maybe even some homemade french onion soup.
 
Gluten/dairy free fudge rounds. Working on finding decent oatmeal creme pie and cosmic brownie recipes I can adapt.

Baked cattern cakes. Or “Cattern,” I guess. Ended up being more r/ididnthaveeggs than I intended. Currants were subbed with raisins, almonds with pecans, caraway seeds with fennel seeds. I also should’ve chilled the dough before slicing and baking contrary to the instructions I followed. The results still taste good, though. Just very flat and a bit different from how they probably should be.

I've been making breakfast for my evening meal the past few nights. I have some frozen cornbread biscuits and some Kirkland Signiature thick cut bacon (the kind that comes in two 1.5 pound packages) - about 15 minutes in my toaster oven and I can cook both items at the same time on one tray. Eat one biscuit with the bacon slices then put some honey or jam on the 2nd one as dessert. Ultra filling and makes me sleep like a rock

I'm screwing around with my Jambalaya recipe today. First off I don't have any celery and I'm not going to go get it because I never use it all and honestly I don't notice that much of a difference. I'm also using a bunch of extra broth because I'm going to toss egg noodles instead of rice in the pot.

Things are still cooking down right now but the flavors all seem right, we'll see if it works with the egg noodles. Thought about going to go get some heavy cream but I'm pretty dead set on working with what I have.
